Mixed Berry FODMAP Friendly Muffins

Hi Everyone,

So in todays blog post I wanted to share with you my recipe for FODMAP Mixed Berry Muffins. Nearly 6 months ago I was diagnosed with lactose intolerance and fructose malabsorption. As a result I now follow a low FODMAP diet in which I avoid lactose, wheat and foods high in fructans. When I don't avoid these foods I get the worst stomach cramps which almost always end up with me running for the toilet crying in pain. So I decided I would try and make my own FODMAP friendly recipe for the classic muffin, I've tried many variations of clean/paleo recipes but decided that I could try to create a FODMAP friendly version. 


The ingredients you'll need are

300 grams of almond meal
207ml full fat coconut milk
4 tbsp rice malt syrup
1/2 tsp baking soda
2 eggs
1 tsp vanilla bean paste
pinch of himalayan sea salt
as much of fresh/frozen berries you like

Mix your dry ingredients together in one bowl and mix you wet ingredients in another bowl


Mix well together


Because the mixture has such a wet consistency, I like to use cupcake paper cases to ensure that the mixture doesn't stick to the tin once its baked.  


I like to scoop 1 tablespoon into the cases, pop some fruit in the middle then scoop another tablespoon on top. Feel free to top your muffins with whatever you like, I've used fresh and frozen berries, slithered almonds or even coconut chips.

If you really want to make it chocolatey, you could pop cocoa nibs through the mixture!


This is my go to recipe if I'm ever feeling like I need a sugary hit, they are also especially nice when you warm them up in your microwave, great for cold wintery weather :)

Celebrating the Queen's Birthday in Kyneton

One of my favourite things to do on a weekend is to go out and explore Victoria in all its beautiful caffeine filled glory. Considering we had the Queen's birthday long weekend (well its not actually her birthday but for some reason we like to celebrate it 2 months later), we decided it was time to explore the beautiful town of Kyneton.




If you ever have the opportunity to go, the iconic Piper St is the place to hit. You could literally spend hours walking along the street, popping into the cutest little shops, plenty of cafe's and restaurants to choose from, bed and breakfasts if your after a gorgeous quiet retreat. A gorgeous day out and only an hour from Melbourne CBD.





After much deliberation and our bellies just begging us to pick a place, we decided upon Annie Smithey Bistrot. What enticed me the most was the fact that they served all local produce and organic where available.



For main I had Confit free range Duck Leg, the hubby had braised beef with dauphinois potatoes and we shared a salad of freekah, quinoa, hazelnuts and ricotta. Let the mouth watering begin!
Let me tell you our plates were so clean you didn't need to wash the plate.




And your probably thinking, surely they couldn't fit dessert....... Oh but we can :) haha!

Clean Cookie Dough Balls



Hi Everyone,
If your looking for a sweet snack that doesn't take hours of hard work in the gym try these cookie dough balls. They're really quick and easy and only need a few ingredients!

Ingredients:
1 cup organic rolled oats
1 heaped Tbsp coconut oil
2 Tbsp Rice malt syrup
1 Tsp vanilla extract
100 grams vegan chocolate


You don't have to use vegan chocolate, you could just use any type of chocolate you prefer. I chose Loving Earth Coconut Milk Chocolate because I'm lactose intolerant and I enjoy the coconut flavour it gives.

1 cup cashew nuts

Yes I gave into the Hype.....SUNDAY RILEY - Good Genes


Hi Friends!

Just wanted to share with you today the newest edition to my collection of potions that make my face look better. I must admit I'm a sucker for anything skin care and make-up and my motto has always been more is more. From a very young age my mum always instilled in me to make sure i always took care of my face, you know the usual cleanse, tone and moisturise malarky.

So your probably wondering what does it do?
The front of the box boasts that it brightens, exfoliates, plumps lines, evens hyper pigmentation and increases circulation for instant radiance. Now I won't lie at first I did think how can one tiny little bottle do all of that, so i decided why not give into another beauty product that promises everything.

So I headed on my mission to Mecca Maxima for this miracle to find out that it costs $142AU, HOLY MOLY! (ok so maybe in that moment i may have sworn). So I kindly asked for a sample, which may I say she was very generous with, I got a whole weeks worth!

I was told that you only need 1 pump for your whole face after cleansing at night but if you wanted the maximum results use 2-3 pumps all over your face like a face mask.

So did it actually work?
OMG does it work, I've never used a product that shows results after 5 days! My hyper pigmentation from old acne scars have faded and my skin just feels and looks so glowy like I had just come off a J.Lo music video. So yes if you feel like your skin is feeling a little lack lustre or just feral and your just feeling fed up with it, head to Mecca and get yourself a sample and just give it a crack!
